Coconut Granola Tart



Indulge in this delightful coconut granola tart that is not only vegan, gluten-free, and refined sugar-free but also bursting with tropical flavors. The crunchy granola crust pairs perfectly with the creamy coconut filling, making it a refreshing and guilt-free dessert option for any occasion.

Ingredients:

  • 2 cups gluten-free granola
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 cup shredded coconut
  • 1/2 cup coconut cream
  • 1/4 cup coconut sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh berries for topping

Instructions:

Preheat the oven to 350F 175C

In a food processor, pulse the gluten-free granola until finely ground

Add melted coconut oil and maple syrup to the ground granola

Pulse until well combined and resembles a dough

Press the mixture into a tart pan evenly, forming the crust

Bake for 10-12 minutes until lightly golden

Let it cool

In a saucepan, combine shredded coconut, coconut cream, coconut sugar, cornstarch, vanilla extract, and a pinch of salt

Cook over medium heat, stirring continuously until thickened

Pour the coconut filling into the cooled tart crust

Spread evenly

Refrigerate the tart for at least 2 hours until set

Once set, decorate the tart with fresh berries before serving
