Coconut Waffles



These Coconut Waffles are a tasty and good for you breakfast choice. Because they are made with coconut flour and coconut milk, they don't have any gluten and taste great. They are a great breakfast treat when topped with fresh berries.

Ingredients:

  • 1 cup coconut flour
  • 1/2 cup tapioca flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup coconut milk
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut optional
  • Fresh berries for topping optional

Instructions:

Put the tapioca flour, baking powder, salt, and coconut flour in a large bowl and mix them together

Add the eggs, honey, melted coconut oil, and vanilla extract to a different bowl and mix them together using a whisk

Add the dry ingredients to the wet ones and mix them together until everything is well mixed

You can add shredded coconut if you want to

Follow the directions on the package to heat up your waffle iron, and then lightly coat it with cooking spray or coconut oil

Pour the waffle batter onto a waffle iron that has already been heated

Follow the directions on the waffle iron until the waffles are golden brown and crispy

If you want, you can serve the coconut waffles hot with fresh berries on top
