Keto Dairy-Free Berry Ice Cream
This keto-friendly berry ice cream is a creamy treat that doesn't have any dairy in it. Since it's made with mixed berries and coconut cream, it tastes great and is low in carbs.
Ingredients:
- 2 cups coconut cream
- 1/4 cup powdered erythritol or preferred keto sweetener
- 1 teaspoon vanilla extract
- 1 cup mixed berries such as raspberries, strawberries, and blueberries, fresh or frozen
Instructions:
Put powdered erythritol, vanilla extract, and coconut cream in a blender
Mix until it's smooth
Fill the blender with mixed berries
Pulse the blender a few times to break up the berries a bit, but they should still be chunky
Put the mixture into an ice cream maker and churn it according to the directions on the machine's box until it gets smooth
Put the ice cream that has been churned into a container that can go in the freezer
Freeze for at least 4 hours, or until it is firm
Let the ice cream sit at room temperature for a few minutes to soften a bit before you serve it
