Slow Cooker Fiesta Chicken & Rice Bowls
These Slow Cooker Fiesta Chicken & Rice Bowls are an easy and flavorful meal that cooks up effortlessly in your crockpot. Packed with protein, fiber, and vibrant flavors, it's a complete and satisfying meal.
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 cup salsa
- 1 cup chicken broth
- 1 can 15 oz black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 bell pepper, diced
- 1 cup long-grain white rice
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, diced avocado, sour cream, cilantro
Instructions:
In the slow cooker's bottom, put chicken breasts
Cover the chicken with salsa and chicken broth
Add rice, chili powder, cumin, garlic powder, salt, and pepper
Also add black beans, corn, diced bell pepper, and cumin
Gently stir the ingredients together
Place the dish on low for 6 to 8 hours or high for 3 to 4 hours, covered, until the rice is soft and the chicken is cooked all the way through
Use two forks to shred the chicken, then stir it in with the other ingredients
Serve in bowls and top with whatever you want
