Chicken-Peanut Stir-Fry



This Chicken-Peanut Stir-Fry is a flavorful and satisfying dish that combines tender chicken with a rich and creamy peanut sauce. Loaded with colorful veggies and served over rice, it's a quick and easy meal perfect for busy weeknights.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1/2 cup crunchy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 2 tablespoons brown sugar
  • 1/2 teaspoon red pepper flakes
  • 2 cups broccoli florets
  • 1 cup snow peas
  • Cooked rice, for serving

Instructions:

Heat the vegetable oil in a big skillet over medium-high heat

After adding the chicken pieces, cook for about 5 minutes, or until browned and cooked through

Take out of the skillet and place aside

Add the minced garlic, bell pepper, and onion to the same skillet

Saut the vegetables for three minutes or until they are tender

Combine the peanut butter, soy sauce, chicken broth, brown sugar, and red pepper flakes in a small bowl and whisk until well combined

Transfer the peanut sauce to the skillet containing the fried vegetables

Mix thoroughly and warm through

To the skillet, add the cooked chicken, snow peas, and broccoli florets

Stir-fry for a further two to three minutes, or until the vegetables are crisp-tender and the sauce has coated everything

Over cooked rice, serve the chicken-peanut stir-fry
