Grilled Lemon Chicken Flatbread
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 flatbreads
- 1 cup arugula
- 1/2 cup Greek yogurt
- 1 tablespoon fresh dill, chopped
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
Instructions:
Add the garlic, olive oil, salt, and pepper to a bowl
Then add the lemon juice and zest
To make a marinade, mix it well
Put the chicken breasts in a plastic bag that can be closed again and again, and pour the marinade over them
Put the bag in the fridge for at least 30 minutes, or better yet, overnight
Warm up the grill over medium-high heat
Grab the chicken from the marinade and put it on the grill
Cook each side for 6 to 8 minutes, or until the chicken is fully cooked and grill marks show up
Take it off the grill and let it rest for a few minutes
Then cut it into thin strips
Put the Greek yogurt and chopped dill in a small bowl and mix them together
This will make the dill yogurt sauce
Put together the flatbreads by putting a lot of the dill yogurt sauce on the bottom of each one
On top of the sauce, put the chicken strips that have been grilled with lemon
Cut up some red onions, crumble some feta cheese, and put some arugula on top of the chicken
Add some extra olive oil and lemon juice on top to make it taste better
Place the flatbreads on a grill and cook for two to three minutes on each side, or until they are lightly toasted and the toppings are warm
Take it off the grill, cut it up, and serve right away
