Mason Jar Southwest Chicken Salad with Cilantro Lime Dressing - Paleo



A delicious and Paleo-friendly Southwest chicken salad with a zesty cilantro lime dressing, perfect for on-the-go meals or meal prep.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell pepper, diced
  • 1/4 cup cucumber, diced
  • 1/4 cup avocado, diced
  • 1/4 cup cooked sweet potato, diced
  • 2 tbsp fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1/2 tsp honey optional
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 2 quart-sized Mason jars

Instructions:

Add salt, pepper, chili powder, cumin, and paprika to the chicken breasts' seasoning mix

The chicken breasts should be cooked through after 67 minutes on each side over medium-high heat in a skillet

Before slicing into strips, take them off the heat and allow them to cool

To make the dressing, combine the lime juice, olive oil, honey if desired, garlic powder, salt, and pepper in a small bowl

Start layering the salad ingredients in the Mason jars: mixed greens, cooked sweet potato, cooked red onion, bell pepper, avocado, cucumber, cherry tomatoes, and chicken slices come last

Place chopped cilantro on top of each jar

When you're ready to serve, seal the jars and keep them chilled

Shake the jar to release the dressing just before eating, then dig into your Paleo Mason Jar Southwest Chicken Salad!
