Paleo Instant Pot Chicken Tikka Masala
An excellent Instant Pot recipe for Paleo-friendly Chicken Tikka Masala. This dish, which is rich and flavorful with coconut milk and aromatic spices, is ideal for people on a low-carb, Whole30, or Paleo diet.
Ingredients:

- 5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup full-fat coconut milk
- 1 cup tomato puree
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp ghee or coconut oil
- 1 tbsp garam masala
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- Salt and black pepper to taste
- Fresh cilantro, for garnish
Instructions:
Activate the saut function on the Instant Pot
Add coconut oil or ghee
Add the ginger, garlic, and onions chopped
Saut until aromatic
Pieces of chicken should be added and sauted until just browned
Add the paprika, turmeric, coriander, cumin, garam masala, salt, and black pepper
To coat the chicken, thoroughly stir
Add coconut milk and tomato puree
Mix everything together
After closing the Instant Pot lid, select the 10-minute Manual/Pressure Cook setting
After finishing, do a quick release after letting the pressure release naturally for five minutes
Carefully remove the lid and give it a stir
Taste and adjust seasoning
Before serving, garnish with fresh cilantro
