Chilli Prawns Burger
Ingredients:
- 200g of large prawns, peeled and deveined
- 2 tablespoons of olive oil
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 4 burger buns
- 1 cup of couscous
- 1 1/4 cups of chicken or vegetable broth
- 1/2 cup of diced cucumber
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of Greek yogurt
- 1 tablespoon of lime juice
- Lettuce leaves for garnish
Instructions:
Marinate prawns with olive oil, chili powder, salt, and pepper
Heat a grill or pan over medium-high heat and cook the prawns for 2-3 minutes on each side until they turn pink and opaque
Remove from heat
In a saucepan, bring the broth to a boil
Stir in the couscous, cover, and remove from heat
Let it sit for 5 minutes, then fluff with a fork
In a bowl, combine the diced cucumber, tomatoes, cilantro, Greek yogurt, and lime juice
Mix well to make a tzatziki-like sauce
To assemble the burger, place a lettuce leaf on the bottom half of each bun
Top with a scoop of couscous and then the grilled prawns
Drizzle the tzatziki sauce over the prawns and add the top half of the bun
Serve your Chilli Prawns Burger with extra tzatziki sauce on the side, if desired
