Paleo Breakfast Cookies
Ingredients:
- 2 ripe bananas, mashed
- 1/2 cup almond butter
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 2 cups almond flour
- 1/2 cup shredded coconut
- 1/4 cup chopped nuts e

- 1/4 cup raisins or dried cranberries
- 1/4 cup dark chocolate chips optional
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
Instructions:
Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a baking sheet with parchment paper
Put the mashed bananas, almond butter, honey, melted coconut oil, and vanilla extract in a big mixing bowl
Almond flour, shredded coconut, chopped nuts, raisins or dried cranberries, dark chocolate chips if using, baking soda, cinnamon, and a dash of salt should all be combined in a different bowl
After adding the dry ingredients to the wet ones, thoroughly mix them together
Leaving space between each cookie, place spoonfuls of the cookie dough onto the baking sheet that has been prepared
Flatten and form each cookie with the back of a fork
Bake for 12 to 15 minutes, or until the edges are golden brown, in a preheated oven
Take the cookies out of the oven and allow them to cool for a few minutes on the baking sheet before moving them to a wire rack to cool down completely
