Tofu Wild Rice Salad
This tofu wild rice salad is a nutritious and flavorful dish packed with protein, fiber, and vibrant vegetables. The combination of wild rice, tofu, and fresh herbs creates a satisfying meal or side dish that's perfect for lunch or dinner.
Ingredients:
- 1 cup wild rice, cooked
- 200g firm tofu, cubed
- 1 red bell pepper, diced
- 1 cucumber, diced
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions:
In a large bowl, combine cooked wild rice, diced red bell pepper, diced cucumber, sliced green onions, chopped parsley, and chopped cilantro
In a separate small bowl, whisk together olive oil, soy sauce, rice vinegar, maple syrup, sesame oil, salt, and pepper to make the dressing
Pour the dressing over the rice mixture and toss until everything is well coated
Heat a non-stick skillet over medium heat and add cubed tofu
Cook until golden brown on all sides, about 5-7 minutes
Add the cooked tofu to the rice salad and gently toss to combine
Serve immediately or refrigerate until ready to serve
