Vegan Apple Saffron Cake



This vegan apple saffron cake is a delightful combination of warm spices, sweet apples, and the exotic flavor of saffron. Perfect for any occasion, it's moist, fragrant, and sure to impress!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of saffron threads around 10-12 threads
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 1/2 cup non-dairy milk such as almond or soy milk
  • 1 tsp vanilla extract
  • 1 medium apple, peeled, cored, and diced
  • 1 tbsp lemon juice

Instructions:

Preheat your oven to 350F 175C

Grease and flour a 9-inch round cake pan

In a small bowl, crush the saffron threads with a mortar and pestle

Combine with 1 tablespoon of warm water and set aside to steep

In a large mixing bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg

In another bowl, mix together the applesauce, vegetable oil, non-dairy milk, vanilla extract, and steeped saffron mixture

Pour the wet ingredients into the dry ingredients and mix until just combined

Do not overmix

Toss the diced apple with lemon juice to prevent browning, then fold it into the batter

Pour the batter into the prepared cake pan and smooth the top with a spatula

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean

Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving
